Happy Easter everyone!
I trust you all had a fantastic holiday , unfortunately due to the nature of my job I get no days off I am always on the grind 365 days a year , super sad story. This was Kunmi’s first easter and I really wanted to do something special for him even though he will never remember the day lol. I thought to do an easter egg hunt but I later realised I might be getting ahead of myself on that seeing as the boy cant even sit down himself talk less of walk lol!
However Kunmi loves to look and observe and boy does he love colours , so I decided to dust off the old apron and make a batch of colorful easter cupcakes for the boy to look at. Cupcakes are very easy to make, they are ready in 20 mins and delicious to eat. So I am here to bless you with my simple Easter cupcake recipe, I hope you enjoy making them as much as I did!
Oooh! Before I forget I did the typical mummy thing and forced Kunmi into a bunny type suit and we had a mini photoshoot with his stuffed bunny Kore , he had some papparazzi moments but he is such a little poser and we both had a jolly good time, see the pictures after the recipe.
Things you need to have
A little over half of a pack of butter (110g)
A little Under a Derica of Icing sugar (110g)
2 Eggs (Biko, beat them just a lil bit)
Vanilla Extract (One cap full)
A lil under a Derica Self raising flour (110g)
1tbs of Milk or not
Things you need for the Butter Icing
Icing Sugar (280g)
Food Colouring (Rose pink , Blue and Yellow)
Now to the Main the main
Cream the butter and the sugar together in a bowl till its nearly white , add the slightly beaten eggs a little at a time then put in the Vanilla extract.
Fold in the flour with a big cooking spoon and add the one tbs of milk if you feel, like do this till the mixture is at drop consistency.
Put the mixture into paper cases in the cupcake tin , make sure its half full. Bake in the oven for about 10-15 minutes, it should be golden brown when its ready, you can put a toothpick in if it comes out clean you are ready to roll.
Bring the cakes out and let them cool.
For the icing , cream the butter and sugar together till the mix is smooth and creamy add your colouring and mix till its well combined.
Put the mix in a piping bag and pipe onto the cool cupcakes , I didn’t have a piping bag so I put my Icing in foil paper and made a makeshift piping bag with that , if you don’t want to use foil you can use a plastic bag.
